Easy & Cheap Homemade Granola Bars

 

The perfect healthy snack! This is a quick & easy granola bar recipe with endless possibilities. Try it over some greek yogurt, so good. Some other variations of the bar I want to try: freeze-dried strawberries, raspberries & walnuts, and peanut butter chips & dried banana. So many variations!

So here’s what you need:

2 cups rolled oats

1/2 cup wheat germ (I had some flax seed around that I ground up and it worked beautifully)

3/4 teaspoon ground cinnamon

1 cup all-purpose flour (I used whole wheat)

3/4 teaspoon kosher salt

1/2 cup honey

1 egg, lightly beaten

1/2 cup vegetable oil (I used EVOO)

2 teaspoons vanilla extract (Or almond, lemon, ect)

3/4 cup cranberries (I used orange flavored cranberries, you could use cherries or any dried fruit you like)

3/4 cup slivered almonds

1/2 cup shaved coconut 

 

Preheat oven to 350 degrees F. Line a 9×13 inch baking pan with parchment paper (For a crunchier granola bar that can be used as crumbled granola as well use a cookie sheet lined with aluminum foil – oil the foil first!) In a large bowl mix: oats, brown sugar, wheat germ (or flax seed), cinnamon, flour, & salt. Make a hole in the center & pour in honey, egg, oil, & extract. Mix well with your hands and lastly add in the dried fruits & nuts of your choosing. Spread onto pan evenly & bake for 25-30 minutes. Cut the bars before they have cooled completely or else it will be a crumbly mess. Enjoy!

Aerophobia

Fear of flying is a fear of being on an airplane (aeroplane), or other flying vehicle, such as a helicopter, while in flight. It is also sometimes referred to as aerophobia,aviatophobia, or aviophobia.

I desperately need all of your help. I am not sure when this phobia started or why because when I was younger I was able to fly in planes for family vacations without batting an eyelash. It must be something about getting older really makes you scared of more things. For example, roller coasters, car crashes, and planes all now scare me. Take off and landing are the worst for me by far but any turbulence while in the air also makes me grip the arm rest as hard as I possibly can and clench my  mouth & eyes shut. I am used to the stares from the other passengers at this point 🙂

Thankfully I can still muster up the courage to get on a plane. Last year I went to visit Brooke in Alaska, two years before that I was in Portugal for my 21st, and later this year I will be flying again. I refuse to let my fear stop me from going places (it just takes a Xanax or a couple cocktails at the gate before departure) but regardless of the steps I take to prevent it I still experience a high level of anxiety, crying (sometimes), and always that fun look of sheer panic on my face.

At the end of this month I will be flying to visit my good friend Katie in Seattle for her birthday. To prepare myself I am starting to envision myself sitting on the plane to make the process a little smoother, right? No. Instantly I feel nauseous, hot, and I start to breathe fast. Not a good start.

So here is where I need your help: I am a firm believer in the power of music and using it to change moods, attitudes, and feelings. It even helps with depression! So I am going to make a playlist for the trip. I cant decide if I want songs to help me remain calm, (Norah Jones -ish) or if I want some songs to pump me up (“Eye of the Tiger” or “Harlem Shake” really gets me going during a workout. Then I would feel all, “Go Sasha you can kick this plane rides ass! In the face!”) But if you would give me some of your favorite song suggestions I could really use them! It will be a 4 hour plane ride & I would like to be distracted for most of them. Really, any suggestions you have would be appreciated.

The joys of being an Aunt.

It’s true what they say, you will never love anyone more than your sibling’s kids.

Okay, I don’t know if they say that but they should, because its 100% true. I am very lucky to have two amazing siblings, and even luckier that they have both had children & made me an Aunt. (2 nieces, 2 nephews) I have been in the delivery room for three of their births and to experience something like that is nothing short of a miracle. My heart is so full of love at the arrival of my newest niece that it just might burst! So without further adieu, I welcome Lena-James Cisilia Williamson. (Lena was my dad’s grandmother whom he adored and still talks about to this day, James was my Uncle Michael and my Uncle Al’s middle names, may they rest in peace, and Cisilia is my mother’s name. She does not have a middle name and Tamara wanted her name to be Lena’s, I love it.)

Saturday Morning 3.2.13

Good (Saturday) Morning!

Its time for our weekly Saturday morning post & this week none other than yours truly has the honors.

Jeanne spent her morning trying to get over her cold with the help of medicine, tea, and lots of Vitamin C! (Hey, that rhymed!) We hope you feel better soon! She also booked our cottage for the get together we have planned in April on Tybee Island. We are staying at the “Inlet Breeze” Cottage and looks adorable! We cant wait to see you & Wynn, Brooke! It will be a fun time filled with lots of wine, laughter, and relaxation that we are all looking forward to!

Laura had to work for the afternoon but made the most of her day by looking stylish and rocking her brand new boots! They are camel colored over-the-knee leather boots that she has rolled down. They match perfectly with her brand new watch her “Boo” (AKA: Chad) got her & the pretty owl earrings she just bought from Decatur. Shop til’ you drop! Laura had the most fashionable Saturday morning.

Brooke had her Saturday planned to go out on a large boat for several days to survey marine birds & mammals along the coast of Kenai Fjords National Park. (How cool is that? Brooke is the bravest person I know) Unfortunately, the seas were too big and they were not able to go, rain check! So instead she got to spend the morning indoors with her best friend and her brand new adorable baby, which I’m sure she is not too upset about. (They gave the babysitters a break so they could watch the start of the Iditarod! Oh the joys of living in Alaska!)

Lastly, my Saturday morning was spent getting some much needed rest. I slept in until 9, which doesn’t sound like much but I am naturally an early riser and usually cant sleep in much later than 7. One 17-hour shift + two 15-hour shifts + one new niece (will post about that later) = a very tired me. Plus it is chilly & overcast today, the perfect weather for sleeping-in. After getting some rest I went to find the perfect accessory for our newly painted master bath.

This is not a sad post.

Really, I promise. Yesterday would have been my grandmother, Jennie’s, birthday. She was my only grandparent and was a very important woman in my life. I miss her dearly. Now I said this was not a sad post, and its not. Its just the time of year that always makes me think of her, especially since it is Mardi Gras as well and we always would stay with her for the festivities. Funerals in New Orleans are a bit different, yes there is the part in the funeral home that is always very sad and time for everyone to say their goodbyes, but after that it is a party. A celebration of your loved ones life, there is food, dancing, drinking, celebrating. So that’s what I am doing, sharing my celebration of my grandmother with you. This is a picture of a essay I wrote in my senior year of high school for my senior scrapbook about who I wish I could see again. (You have to click on it to enlarge so you can read it) Enjoy!

If I were a famous…

My first post of all time in the history of my life I decided could not be about food. At least not mediocre food. When I cook something awesome enough to post about, I will. Jalepeno Poppers on Super-bowl Sunday is not that food. So instead my post is going to be an I-ask-a-question-and-we-all-answer type post that gets everyone involved & excited about our shiny new blog! So here’s the question:

If you were a famous rapper, who would be in your posse?

There are some guidelines. All posse members must be celebrities. The type of celebrity doesn’t matter, just someone famous. Famous & Alive. Second, you have to choose at least 3 members.

So, here goes.

First off if I was a rapper my name would be changed to “LaSosha”. I will call my posse the “Dip N Dotz” and we will consist of:

1. Mindy Kaling. Girl is hilarious and she seems like the kind of person that would be a good friend & always have my back. If you haven’t read her book yet (Is Everyone Hanging Out Without Me? And other concerns,) you should.
